Organic San Marzano Tomato Sauce

Remembering the days when Prego and Ragu were lonely on the shelves, no thank you!... now there are sooooo many tomato sauces out there, it is insane. Nothing is more satisfying then making your own sauce, the aromas that linger throughout the kitchen always creates a comforting experience. People could say, ahhhh lemme just open up a jar and call it a dinner.. that is ok if your in a pinch.. but something about making your own homemade sauce from scratch, can make you feel special. lol. San Marzano tomatoes come straight from the mother land, Italy. They are grown in rich volcanic soil which helps lower the acidity and makes them sweeter then most other tomatoes. This sauce is versatile and is perfect for many italian dishes including lasagna, eggplant parmesan, etc.... It is also a great base for making vodka sauce. If there is leftover and we want Mexican, you can use this sauce in spanish risotto, or enchiladas.

Ingredients-

1 28 OZ can OG San Marzano Tomatoes

1 15 OZ can Organic Tomato Sauce

4 Tablespoons Tomato Paste

1 Cup Chopped OG Yellow Onion

3-4 Cloves OG Garlic Minced

1/8 Cup OG Olive Oil

1 Teaspoon Garlic Powder

1 1/2 Tablespoons Kosher Salt

1 Teaspoon OG CANE SUGAR

1/4 Teaspoon Oregano

Pinch Crushed Red Pepper Flakes

Pinch of Black Pepper

Add Olive oil to a nice saucepan, put on medium heat. Add onion cook for 2 mins, then add garlic and cook for 2 more mins. This is when the aroma starts.. Now add 1 Tablespoon salt and 1 teaspoon cane sugar, 1 Teaspoon Garlic Powder, 1/4 teaspoon Oregano, pinch red pepper flakes. Add tomato paste a cook for a couple mins.. ** this is key to developing flavor** after the tomato cooks with the oil, garlic and onion.. Now you would want to pulse the peeled tomatoes with food processor, immersion blender or the good ole fashion way, by hand! You can then add the San Marzano's to the sauce and remaining salt. Cover and put on low to simmer for 20-30 mins. The longer you cook this the better, but it is not necessary. As always when you cook with love you taste the difference.. So sprinkling a little love and gratitude goes a long way..Serve with whatever you want and enjoy.
