Summer Grilled Veggie & Quinoa Wrap with Citrus Tahini Dressing

This wrap is filled with fresh local Organic Grilled Veggies, Organic Quinoa, Shelled Hemp Seeds, and a Citrus Tahini Dressing. Quinoa is always a great choice when eating plant- based because it is rich in antioxidants and is a complete protein with essential amino acids. Added Hemp Seeds are rich in healthy fats including omega-3 and omega 6 fatthy acids, which can reduce blood pressure and cholesterol. Tahini is also highly nutritious and a great choice when making a dressing!


Serving- 2 Wraps


For the Wrap-

2 - Burrito size Flour Tortillas

1- Medium Organic Eggplant (Grilled)

1- Large Organic Zucchini (Grilled)

1- Organic Heirloom Tomato

1- Organic Smashed Avocado

2 Cups- Organic Cooked Quinoa

1/4 cup- Organic Red Onion

1/4 cup- Peperoncini from the Jar

3 Tablespoon- Shelled Hemp Seeds

7- Fresh Basil Leaves

Hellmmans Vegan Mayo


For the Dressing-

2 Tablespoons Purified Water

1Teaspoon- Organic Agave or Maple Syrup

2 Tablespoons- Organic Tahini

1- Lime (Fresh Squeezed)

2 Tablespoons Organic Olive Oil

Pinch Himalayan Salt, Black Pepper, Garlic Power


Assembling-

In a bowl add the cooked Quinoa, the Hemp Seeds, Drizzle Olive Oil and Squeeze a 1/2 of lime, salt, pepper and mix together. Set aside. Now add the dressing ingredients together and whisk to combine, taste and add anything else to your liking. Grill the Eggplant and Zucchini. Then add the Tortillas on the grill briefly to warm and make pliable. Lay the wraps down, lightly spread a small amount of Vegan Mayo on the wrap to help it hold together when rolling. Add 1 cup Quinoa per wrap, Zucchini, Eggplant, Red Onion, Tomato, Avocado, Peperoncini and Basil. Drizzle the Tahini Dressing and wrap it up! Dip the wrap in the rest of the Dressing if you like and enjoy this healthy summer lunch.
